15-Minute Flavourful Roasted Kale
You might have heard Kale being banded around as the new trendy staple of a healthy diet, and although it is full of incredible nutrients such as Vitamins A and K, whilst also being a great source of Iron and Fibre, people seem to have a love/hate relationship to it due to it’s coarse texture and strong flavour.
BUT this kale recipe is a game changer!
Roasting the kale for 10 minutes makes it so soft and delicious, I am positive you are going to love it as much as I do. It’s got plenty of asiatic inspired ingredients to make the flavours really pop! Try it for yourself, it only takes 10 minutes and makes a beautiful side dish (or main… it’s THAT good).
3-4 handfuls of washed (thick stalks removed, and excess water removed with a tea towel or kitchen roll paper)
1 tbsp oil (I love using melted coconut oil)
1 tbsp balsamic vinegar
1 tbsp of Soy Sauce (or Tamari for those on a gluten-free diet)
1 tsp apple cider vinegar, and
1 tsp sesame oil,
Optional: 2 tsps sesame seeds for sprinkling on top
Pinch of salt
Preheat oven to 180 degrees celsius. Mix all the ingredients together in a lined or non-stick large baking tray making sure it’s all incorporated and the kale is evenly spread out. Place in the oven for 10-15 mins depending on the texture of kale you want, check once or twice towards the 10 minute mark to make sure the kale isn’t burning. Sprinkle sesame seeds on top if desired. Serve and enjoy the tastiest way of getting your vitamins and antioxidants in! ✨
